Aloha Chicken Kebabs and Spinach Salad

This week on What’s for Dinner Wednesday, we made a delicious tropical supper.

Our kebabs had Teriyaki marinated chunks of chicken or Light Life Tenders, pineapple, onion and red pepper.  We paired this with pita pockets and three onion dip, which was truly amazing!  

To balance our plate, we added a spinach salad with poppyseed dressing, that I made from scratch.  The dressing recipe can be found below.  It was super quick and easy to make and tasted great.

Everyone in our family approved of this meal – even the toddler!  So that’s a huge win!

This recipe was really easy to make.  It does take a bit of time to assemble the kebabs, but it’s totally worth it.

For the spinach salad, we used baby spinach, sliced celery, red onion, strawberries and sunflower seeds.  We made our own poppy seed dressing – just combine all the ingredients in a cruet and shake!

Poppy Seed Dressing Ingredients:

1 clove Garlic, minced

1 tbsp dijon mustard

2 tbsp honey or sugar

1 tbsp lemon juice

1/4 tsp salt

1 tbsp poppy seeds

1/4 cup apple cider vinegar

1/2 cup olive oil.
