You can't even go to the drive through as quick as you can make this meal!

This week on What’s for Dinner Wednesday, we made a super simple but delicious Black Bean and avocado wrap.  It took about 10 minutes start to finish, including to make a side salad and dressing from scratch.  All of the ingredients are things that I always have on hand, so this is a perfect “throw together” dinner for those nights when things just don’t go as planned and you don’t have time to cook.

Guacamole Cucumber and Tomato Side Salad


1 pint grape tomatoes, sliced in half

1/2 an english cucumber sliced into triangles

1/4 cup chopped red onion

2 tbsp chopped cilanto

1 tbsp lime juice

1 tbsp white wine vinegar

3 tbsp olive oil

1 tbsp Guacamole seasoning

1 tbsp honey


Whisk dressing ingredients together in a bowl.  Add the veggies, and stir  to combine.  


We really loved the flavours in this recipe, and it was so easy to make in just minutes.  Went really good with a cold beer too 😉
