Pad Thai is a delicious, but usually complicated dish to make with many ingredients and steps. Tune in as we show you a quick and easy variation on this delicious meal.
Easy Pad Thai
Cook time: 15 min
1 pkg Pad Thai Sauce Mix
2 tbsp Soy Sauce
3/4 cup hot water
1/2 package Rice Vermicelli Noodles
1 tbsp olive oil
3 cups of Vegetables – choose your own, ie -shredded carrot, sliced bell pepper, sliced onion, chopped broccoli
6-8 oz Shrimp or chicken
1 Beaten Egg
1 cup Bean sprouts
2 tbsp crushed peanuts
1/4 cup chopped cilantro
Wedge of Limes
Bring a large pot of water to boil and once boiling, add the rice noodles. Boil for about 5 min.
Meanwhile, prepare the sauce in a medium bowl – whisk together the sauce package, soy sauce and hot water. Set aside.
Heat olive oil in a wok. If using chicken, brown the chicken, then remove from the pan.
Add in the veggies and saute until tender crisp.
Add in the chicken or shrimp and cook until shrimp is opaque.
Add in the sauce and cook for 2-3 minutes.
Remove from heat.
Place 1/2 -1 cup rice noodles into pad thai mixture and stir until it is all incorporated.
Divide into bowls and top with bean sprouts, peanuts and cilantro.
Squeeze lime over all, add sriracha if desired for extra spice.
