What's for Dinner Wednesday - Sheet Pan Fajitas

Tune in as my family and I prepare several variations on a fajita themed supper. With 6 different people in our home, there are a wide variety of preferences, and we have to get a bit creative so that everyone is happy. This sheet pan dinner was a huge hit!

Sheet Pan Fajitas

Prep Time: 10 min

Cook time: 10 min

Serves: 6

Ingredients:

Your choice of meat or vegetarian protein.  (We did a chicken for the kids and black beans and corn for the adults)

1 tbsp Fajita seasoning

Vegetables – 1 cup each

Red, Yellow and Green Bell pepper

Sliced Onion

For Guacamole

2 ripe avocados

2 tbsp Guacamole Seasoning

1 tbsp Lime Juice

For the Salsa

1 chopped tomato

1 tbsp diced onion

1 tbsp Poco Picante Salsa Seasoning

Toppings

Grape tomatoes

Cucumber

Romain lettuce

Sour Cream

Grated Cheddar

 

Directions:

Preheat Oven to 400F

Season meat (if using) with 1 tbsp Fajita Seasoning.

Arrange meat, onion and bell pepper on a sheet pan

Roast for 15 minutes or until meat is cooked through and veggies are tender crisp. 

*if using a vegetarian protein source

Season beans with 1 tbsp fajita seasoning and saute on the stove while the peppers and onions cook in the oven.

 

Meanwhile prepare toppings

Guacamole – mash 2 ripe avocados.  Stir in 2 tbsp guacamole seasoning and 1 tbsp lime juice.

Salsa – chop tomato and onion.  Add in 1 tbsp salsa seasoning and stir together.

Chop grape tomatoes, cucumber and lettuce

Grate cheese.

 

Remove sheet pan from the oven.  Assemble fajitas on whole wheat wraps or as a salad.
